I had a very nice visit to DLC in Burkittsville MD. Luckily the two main owners/founders were in the tasting room so I was able to question them on how long it took them to get where they are. Opening a Cidery really is a long game but its clear you have to be prepared for a lengthy wait before you achieve break even sustainability. I am interested in long slow growth and producing a high quality product but I would prefer not to borrow money to do it. I was hoping to start at the nano scale and then move on from there but even a nano Cidery might require a steep capital investment due to permits and licensing. I am still waiting for a call back or email from the state comptroller to find out more.
